– The same blue food dye found in M&Ms and Gatorade could be used to reduce damage caused by spine injuries, offering a better chance of recovery, according to new research.

Rats injected with BBG not only regained their mobility but temporarily turned blue.

Researchers at the University of Rochester Medical Center found that when they injected the compound Brilliant Blue G (BBG) into rats suffering spinal cord injuries, the rodents were able to walk again, albeit with a limp.

The only side effect was that the treated mice temporarily turned blue.

The results of the study, published in the “Proceedings of the National Academy of Sciences,” build on research conducted by the same center five years ago.

In August 2004, scientists revealed how Adenosine triphosphate, which is known as ATP and described as the “energy currency of life,” surges to the spinal cord soon after injury occurs.

Researchers found that the sudden influx of ATP killed off healthy cells, making the initial injury far worse. But when they injected oxidized ATP into the injury, it was found to block the effect of ATP, allowing the injured rats to recover and walk again.

“While we achieved great results when oxidized ATP was injected directly into the spinal cord, this method would not be practical for use with spinal cord-injured patients,” said lead researcher Maiken Nedergaard, professor of Neurosurgery and director of the Center for Translational Neuromedicine at the University of Rochester Medical Center.

“First, no one wants to put a needle into a spinal cord that has just been severely injured, so we knew we needed to find another way to quickly deliver an agent that would stop ATP from killing healthy motor neurons. Second, the compound we initially used, oxidized ATP, cannot be injected into the bloodstream because of its dangerous side effects.”

M&M’s have a long history in the United States . They were first produced in New Jersey in 1941 by a company owned by Forrest Mars, Sr. He got the idea for M&M’s during the Spanish Civil War when he saw soldiers eating Smarties, a chocolate morsel covered with a hard sugar shell so that the chocolate wouldn’t melt.

When Mars introduced M&M’s to the G.I.s during World War II they were an immediate hit so production was increased and the candies were sold exclusively to the military.

Originally M&M’s were sold in cardboard tubes, but in 1948 Mars decided to replace the cardboard tube with cellophane packaging like they are sold today.

Throughout the years Mars has added new products and made changes generated by public demand. The Peanut Chocolate candies were introduced in 1954, along with the famous slogan, “the milk chocolate that melts in your mouth, not in your hand”. The M&M’s candies colors have come and gone through the years.

During the 1970’s the red candies were eliminated due to health concerns over the dye amaranth (red dye). Even though Mars didn’t contain the dye, the red M&M’s were replaced with the orange colored candies. In 1987 the public had forgotten the scare and Mars reintroduced the red M&M’s. Today the color scheme is mostly red, purple, blue, green, orange, yellow and brown, all with the same taste.

Throughout the years nearly a dozen varieties of the chocolates have been marketed, including dark chocolate, dark chocolate peanut, almond, peanut butter, minis, premiums and last year M&M’s released the Wildly Cherry Chocolate candies.

The world’s chocolate hunger can be met by increasing the cacao tree growing area and by increasing the yield of cacao per acre. Since the cacao tree is mostly grown in the poor countries of the world, the farmers generally can’t afford fertilizer or pesticides. The farmers continue to expand their crops by slashing and burning patches of rainforest. This releases nutrients that make the trees thrive for awhile, then the farmers move to a new patch of rainforest.

The Mars scientists are looking into growing higher-yielding strains of the tree by using fertilizer, and they believe that is the key to increasing the size of crops. This museum is a monument to Milton S. Hershey, who founded the company in 1894. The museum combines relics of the past, like a model of the machine used to wrap Hershey’s Kisses, along with high tech gadgets.

Hershey had several false starts in the candy making business before hitting on a winner in 1899 when he developed the Hershey process which produced a milk chocolate bar. In 1907 Hershey introduced the small flat-bottomed conical-shaped chocolate pieces he named Hershey’s Kisses. In the 1920’s Hershey added more chocolate products like the Mr. Goodbar, Hershey’s Syrup, chocolate chips and in 1938 the Krackel bar.

In 1963 Hershey acquired the Reese’s company that was founded by a past employee. That added the Reese’s peanut butter cup to his line of chocolates. Then in 1977 Hershey acquired Y & S Candies founded in 1845, and now the maker of Twizzlers licorice candies. Some of the newest products in the Hershey stable are Reeses Pieces Peanut Butter Candy , Good and Plenty and Kissables which is a smaller version of the original Hershey’s Kisses.

Although the Oxford research isn’t a clinical test, just an observational one, it works for me. But of course the scientists warn that it’s best not to get carried away as too much chocolate and wine are both bad for my health.

Whether you consume it or put it on your face the cacao bean seed, which to most people is known as chocolate , makes everyone’s life a little more pleasant.

Chocolate comes from the tropical cacao tree’s cantaloupe-sized bean pods. Actually it’s the slimy seeds inside the pod that manufacturers use to make the chocolate candy, chocolate drinks, and the cosmetics we all use.

This love of chocolate all started 3,200 years ago during the time of the Olmec peoples of Middle America . Later the Mayans drank the bitter seed extract with every meal, and traded it with the Aztecs.

The Europeans were introduced to chocolate by Christopher Columbus who gathered cacao seeds and took them back to Spain in 1502. The Spaniards discovered that adding sugar, vanilla and cinnamon to the seeds took away the bitter taste.

Then the Dutch and Italian sailors came across cacao seeds and took them back to their respective countries. Chocolate soon became so popular with Europeans that they started plantations throughout the tropics.

A Dutch chocolate maker, Conrad van Houten, invented a process of removing the fat from the roasted cacao seed in 1828 which produced a fine cocoa. This allowed for the making of chocolate drinks and for combining chocolate with sugar and remixing it with cocoa butter to create a solid form. It wasn’t until 1849 that Joseph Storrs Fry produced the first sweet, edible solid chocolate. That was followed in 1867 with the invention of chocolate milk by Henri Nestle. Soon after a process known as conching, developed by Rudolphe Lindt, made chocolate more blendable and enhanced the quality of the candy. Then chocolate became more affordable and the all the world craved it.

Chocolate not only tastes great, it’s also good for your health. It’s high in antioxidants, and phenolic compounds which help combat coronary disease. Phenolics prevents fat-like substances in the bloodstream from oxidizing and clogging the arteries. Some phenolic compounds known as flavonoids combat heart disease, and the serotonin, endorphins and phenyl ethylamine in chocolate not only alter our moods, but can lead to romance.

Today West Africa produces 40 percent of the world’s cocoa, while Mars and Hershey’s companies control two-thirds of the $16-billion a year North American chocolate market.
