The University of Wisconsin-Madison hosts their 50th annual class this summer, July 15-27, 2012. The Resident Course in Confectionery Technology has graduated over 1200 students worldwide.
For two weeks it’s all about candy…hard candy, soft candy, gummi candy, and chocolate, of course. Even bubblegum and chewing gum! Students study chemical and ingredient interactions, processing and sensory analysis, and more. There are lectures and then the real fun begins in the hands-on laboratory. Imagine mad candy scientists mixing corn syrup and sugars, oils and emulsifiers, panning and polishing.
Who knows the possibilities of what new candy or gum will be born!
